This three-ingredient cocktail is made with a simple strawberry puree, freshly squeezed lemon juice and Prosecco, an Italian sparkling white wine from the Veneto region. The colour is festive, and the Prosecco adds a celebratory fizz to the sweet but tangy strawberry puree. Known in Italy as a Rossini cocktail, it is a twist on the classic Venetian Bellini that is made with pureed peach and Prosecco. In fact, it is sometimes referred to as a Red Bellini or Strawberry Bellini. From the most elegant occasion to a relaxing drink at the end of the day, this is a perfect cocktail. Recipe Inspiration: this recipe was developed after making a very Easy Strawberry Sauce to enjoy with my No-Churn Vanilla Ice Cream. I realised that with a slight adjustment I could make a Rossini Cocktail, which is one of my favourite Italian cocktails.

- Strawberries: I have used fresh strawberries, at the height of their season, when they are at their sweetest and full of flavour. Choose strawberries that have vivid green leaves and are a bright red colour from top to bottom. Chill the strawberries before pureeing.
- Lemon juice: freshly squeezed lemon juice adds tang and brightens the strawberry flavour.
- Prosecco: this light, refreshing, sparkling Italian wine is traditionally used to make this cocktail.
Variations:
Prosecco: it is not essential that you use Prosecco, you can use Champagne or any dry sparkling wine that you enjoy drinking.
Non-alcoholic: alcohol-free sparkling wine is readily available in bottle shops/wine stores and good supermarkets. As there's just three ingredients for this cocktail, you don't need a separate non-alcoholic drink when entertaining, just add the alcohol-free sparkling to the puree.
How To Make Strawberry Prosecco:

1 - Prepare your strawberries:
Wash and dry the strawberries before hulling and roughly chopping.
2 - Add to a food processor:
Add to a small food processor with the lemon juice.
3 - Blend until smooth:
Process the mixture until it is a smooth consistency.
4 - Sieve the mixture:
Add the mixture to a fine sieve and using the back of a spoon, mash the fruit against the sieve so the seed-free puree falls into a small bowl.
Add a tablespoon of puree to a Champagne glass and carefully top with Prosecco. Stir gently to combine.
Hint: make sure that your Prosecco is chilled and that you make the puree from chilled strawberries; you don't want to dilute your cocktail by adding ice cubes.
Tips for Success, Storage and FAQs:
You can prepare the strawberry puree two days in advance, keep it covered and refrigerated and add Prosecco when you're ready to serve.
You can add a small amount of caster/superfine sugar to the strawberries before blending. Don't add too much, it is not a sweet drink.
That depends on the size of your glass. Traditionally it is a ratio of 1:2, half as much puree as Prosecco, but you can alter the amount to suit your taste.
Store it in an airtight container in the fridge for up to two days. Alternatively, you can freeze it in an airtight container for up to three months.
Top Tip:
To maintain the effervescence of the Prosecco, the drink is best if made just before serving.

Strawberry Prosecco
Please note:
For accuracy, when weights are provided, we recommend weighing your ingredients. This will produce the best results. All oven temperatures listed are for fan forced.
Ingredients
- 155 g (5.5 oz) fresh strawberries See Note 1
- 2 teaspoon lemon juice - freshly squeezed
- 750 ml bottle of Prosecco - chilled
- strawberries - for garnish, optional
Instructions
- Wash and dry your strawberries before hulling. Roughly chop the strawberries and add to a small food processor with the lemon juice and blend until a smooth puree. (See Note 2.)To remove the seeds, add the puree to a fine sieve and using the back of a spoon, mash the fruit against the sieve so the seed-free puree falls into a small bowl. Taste the puree to check that it is sufficiently sweet for your taste.
- Add 2-4 teaspoons of the puree to your glass. You can add more puree if you prefer a fruitier drink.
- Hold your glass on an angle and slowly add Prosecco as it is inclined to overflow - nobody wants to waste Prosecco! Stir very briefly and gently to combine.
- Garnish your drink with a strawberry. Cut a slit from the bottom of the strawberry about ¾ up toward the leaves and push it onto the edge of your glass. Add a sprig of mint if you wish. Enjoy!
Notes
- Puree: if you have made the puree from room temperature strawberries, it is preferable to chill it before adding the Prosecco.
- Sweetness: check the sweetness of your strawberries before blending. If necessary. add a small amount of caster/superfine sugar. Not too much, this is not a sweet cocktail.
- Glass: I like to serve it in Champagne flutes, but it will also look lovely in a wine glass. If you have room in your fridge (and honestly, I seldom do!) it is a nice touch to chill the glass.
- Storage: store the puree in an airtight container in the fridge for up to 2 days.
- Freezing: the puree can be frozen in an airtight container for up to 3 months.
