For busy mornings, when you need a quick, nourishing start to the day, my Strawberry and Banana Smoothie is the solution. With sweet juicy strawberries, fresh banana and coconut yoghurt, it is creamy, nutritious and extremely satisfying. It’s a recipe that takes just minutes to prepare and is an ideal breakfast on-the-go.

Why You’ll Love This Recipe:

  • This is a refreshing drink that makes an easy breakfast or energy booster at any time of day. 
  • Smoothies are so easy to make; no culinary skills are required here. Just add your ingredients to a blender and combine. It doesn’t come easier!

  • There is no added refined sugar, the sweetness is provided naturally by the fruit with the yoghurt adding a delicious tang.
  • The smoothie is naturally gluten-free, dairy-free and vegan.
  • This is a recipe that you can enjoy all year – it is made from readily available ingredients. And if you can’t get fresh berries, you can use frozen. Simply customise the recipe to suit your preference or the ingredients that you have on hand.

Recipe Inspiration: this is one of my go-to breakfasts or snacks. Easy and so delicious!

  • Banana – I have used a frozen banana; as well as chilling the smoothie, it also makes it creamier. If you have bananas that are past their prime, it is a great idea to peel and then freeze them. They are perfect for smoothies or to make our Baked Banana Oatmeal.
  • Strawberries – use fresh or frozen strawberries, depending on seasonal availability.
  • Vanilla extract – be sure to use one which is naturally extracted from the bean, and not one which is artificially flavoured. 
  • Coconut yoghurt – use a plain yoghurt, it adds a lovely creaminess and thickness to the smoothie. Greek yoghurt is also ideal.
  • Milk – use any kind of milk. I really like the flavour of almond milk, but use what you prefer.

Variations:

Rolled Oats – to add bulk to the smoothie as well as extra nutrients, add a tablespoon, or more if you prefer, of rolled oats to the blender. 
 
Avocado – this is a good alternative to banana as it provides a similar texture. It is however less sweet so you may need to add a small amount of maple syrup, or honey if you don’t need it to be vegan.

Berries – swap out the strawberries for blueberries if you prefer.

1 – Add your ingredients to the blender:
To a blender, add all of your ingredients.

2 – Blend until smooth:
Blend until it is smooth and creamy. Pour into a glass and enjoy!

How do I make this extra chilled?

You may wish to add a little ice if you would like your smoothie to be extra chilled.

Can I double this recipe?

Yes, whatever capacity your blender can hold, you can make!

Top Tip:

If you have smoothie fans in your household, you could make up some packs of frozen fruit to keep in the freezer for this purpose. Store the fruit in ziplock bags in the freezer for up to 6 months. Be sure to label and date the ingredients as they can be difficult to identify once frozen. It can be a real time-saver and is a great way to use fruit that you have grown or purchased at the height of the season when prices are generally less expensive.

Serving Suggestions:

  • To accentuate the beauty of the smoothie, pour it into a glass and add some mint leaves and some sliced strawberry to the top.
  • If you prefer, a light sprinkle of grated nutmeg on the top adds a lovely flavour.

Ingredients

  • 1 large frozen banana – cut into small pieces See Note 1
  • 1 cup (170 g) strawberries – hulled and cut in half
  • ⅓ cup (80 g) coconut yoghurt See Note 2
  • ⅓ cup (80 ml) almond milk – or other milk of choice
  • ½ teaspoon vanilla extract

Instructions

  • Place all the ingredients into a high-speed blender and blend until smooth and creamy.
  • Pour into a large glass or two small glasses and enjoy.

Notes

  1. Banana: should you not have a frozen banana, you can add some ice cubes to chill the smoothie.
  2. Yoghurt: I have used coconut yoghurt, but you could also use Greek or plain/natural yoghurt.
  3. Sweetener: if you prefer your smoothies sweeter, add a little honey or maple syrup to taste.
