Easy Strawberry Sauce

With just three ingredients, this Easy Strawberry Sauce is bursting with bright, fresh strawberry flavour and is made with minimal effort. Simply combine some sliced strawberries in a saucepan with sugar and lemon juice, simmer for a short time and this delicious condiment is ready for use in a myriad of ways. It doesn’t come much easier than this!

When you make this Strawberry Sauce, you are in control of the ingredients. There are no unnecessary preservatives or additives, just pure, fresh ingredients.

Recipe Inspiration: this very easy, simple recipe is a great way to use fresh strawberries and it will take less than 30 minutes until you have a beautiful topping to add to many desserts.

  • Strawberries – we have used fresh strawberries, at the height of their season, when they are at their sweetest and full of flavour. Choose strawberries that have a bright red colour and vivid green leaves.
  • Sugar – regular granulated sugar is suitable here. 
  • Lemon juice – freshly squeezed juice is a great flavour booster and balances the sweetness of the sauce. 

Variations:

Strawberries – you could use fresh raspberries for a delicious Raspberry Sauce.
 
Lemon juice – fresh lime juice is an alternative.
 
Granulated sugar – caster/superfine sugar can also be used.Content

How To Make Strawberry Sauce:

Steps 1-2 of preparing this recipe: the ingredients in a saucepan and the cooked sauce.

1 – Prepare the strawberries:
Slice the strawberries and add to a medium size saucepan with the sugar and lemon juice. 

2 – Cook the sauce:
Place the pan over a low-medium heat and bring the mixture to a boil, stirring occasionally. The strawberries will naturally release their juice.

Simmer over medium-high heat for 15 minutes, stirring occasionally. 

Steps 3-4 of preparing this recipe: blending the sauce using an immersion blender and the finished sauce.

3 – Purée the sauce:
Set aside to cool slightly before either using an immersion hand blender or blender to purée until smooth.

4 – Serve or refrigerate:
Serve the sauce with your dessert of choice or refrigerate for up to three days.

Tips for Success, Storage and FAQs:

Can I make the Strawberry Sauce in advance?

Yes, just store it in an airtight container in the fridge for up to 3 days.

Can I freeze the Strawberry Sauce?

It freezes beautifully. Add to a freezer safe ziplock bag and seal, stored flat in the freezer for up to 3 months. Alternatively, freeze in an ice cube tray so you have individual serves.

Can I make a coulis from the sauce?

Yes, you can. Purée the strawberries using an immersion blender or a food processor. Pass the purée through a fine strainer, using a wooden spoon or spatula to extract as much liquid as possible. Discard the solids in the strainer and enjoy the coulis.

Is it necessary to add cornflour to the sauce?

It is not necessary, this recipe allows the pure, fresh flavours to shine through. Adding cornflour to the sauce can cause it to become cloudy.

After refrigerating the sauce, can I serve it warm?

Yes, you can, warm it gently in a saucepan on the stove or in the microwave.

Top Tip:

For the best result, use the sweetest strawberries that you can buy. If the strawberries are flavourless to begin with, the flavour of the sauce will be dull.

Serving Suggestions:

One of the great advantages of this Easy Strawberry Sauce is its versatility; it can be used in a myriad of ways. Some suggestions are:

  • Serve over our Oat Flour Pancakes or Waffles; it adds great flavour.
  • Swirl some through Greek yoghurt for dessert or a great start to the day.
  • As a topping for my Baked Cheesecake.
  • Strawberries and chocolate are great companions – add Strawberry Sauce to my Flourless Chocolate Cake for a sublime dessert.

Ingredients

  • 500 gm (1.1 lb) fresh strawberries – prepared weight See Note 1
  • 80 g (⅓ cup) white sugar
  • 1 tablespoon lemon juice – freshly squeezed See Note 2

Instructions

  • Prepare your strawberries by hulling them and then cutting into roughly 1 cm (0.4") pieces.
  • Add to a medium sized saucepan along with the sugar and lemon juice.
    Turn on the heat to medium, and stir to dissolve the sugar.
  • Increase the heat to medium-high, and bring to a boil. Simmer for 15 minutes.
  • Set the sauce aside to cool slightly before either using an immersion hand blender or blender to puree until smooth.

Notes

  1. Strawberries: this is the weight once the strawberries have been hulled. For the best result, choose strawberries which are sweet and full of flavour. Look for those which are bright red with vivid green leaves.
  2. Tablespoon: we use a standard Australian tablespoon which is 20 ml (4 teaspoons).
  3. Non-reactive saucepans: are those which are ceramic, stainless steel, glass or enamelled cookware. Copper, iron and aluminium pans are reactive. Acidic foods, such as lemons, may take on a metallic taste and discolour if cooked in such pans.
  4. Storage: you can make this strawberry sauce up to 3 days in advance; cover and refrigerate until ready to serve.
  5. Freezing: add to a freezer safe ziplock bag, seal, and store flat in the freezer for up to 3 months. Alternatively, freeze in an ice cube tray so you have individual serves.
  6. Nutrition: is calculated on the full quantity of Strawberry Sauce.

    Hi Alex,

    I found your recipe looking for a sauce to serve over ice cream and it was delicious! My daughter kept asking for more sauce and we ended up finishing the whole batch! Next time, I’m going to double the recipe so we have some leftover for the next day!
