    These Strawberry Overnight Oats are a taste of Summer to start your day. Their incredible taste and easy preparation are two reasons to love this recipe.

    Prepared the night before, all you need to do in the morning is stir, add your favourite toppings and enjoy.

    Aside from being delicious, this is a nutritious breakfast that will keep you satisfied for longer.

    You will love these Strawberry Overnight Oats because:

    • They require minimal preparation – all you have to do is puree the strawberries, combine them with your other ingredients and place in the refrigerator!
    • The quantities can easily be adjusted to your needs – the written recipe serves two, but can easily be halved or doubled!
    • They are ideal for meal prep. Lasting for three days in the fridge, you can make a start on your breakfast preparation for the week ahead.
    • It is so versatile – the oats can be enjoyed as is, or you can add some additional toppings. We love a little yoghurt and fresh strawberries when serving. There are many delicious topping and flavour ideas for you to try.

    Strawberries – fresh or frozen strawberries can be used here. If using frozen strawberries, allow them to defrost before making the puree.

    Old Fashioned Rolled Oats – the best oats for this recipe. Although steel-cut oats and quick-cooking oats can be used in overnight oats recipes, they may require a different ratio of liquid.

    Milk – I like to use almond or oat milk, but soy milk works just fine as does dairy milk – use a milk of your preference.

    Chia seeds – helps give the oats a nice thick texture, and also add some extra fibre. Black or white chia seeds are fine to use in this recipe.

    Maple syrup – for a hint of extra sweetness. You could also use honey – if using, add it to the strawberries when making the puree.

    Vanilla – use a good quality vanilla extract that is naturally produced from the vanilla bean and not synthetically flavoured.

    Lemon zest – adds freshness and brightness to the overnight oats.

    How to Make Strawberry Overnight Oats:

    Steps 1-2 of preparing this recipe - the blended strawberry puree and all of the ingredients in a glass bowl.

    1 – Make the strawberry puree:
    Add the strawberries to a small blender and puree until smooth.

    2 – Add ingredients to a bowl:
    Put the strawberry puree in a medium-size bowl, and add the other ingredients.

    Steps 3-4 of preparing this recipe - mixing all of the ingredients together and the mixture in a jar ready to be refrigerated.

    3 – Combine the ingredients:
    Whisk or stir the mixture until it is well combined.

    4 – Refrigerate:
    Cover the bowl with clingwrap, or divide the mixture into two glasses or mason jars and cover. Refrigerate for 6 hours or overnight.

    These Strawberry Overnight Oats are so simple to prepare. The combination of strawberry, lemon and vanilla is just delicious.

    How long will the Strawberry Overnight Oats last?

    For the best taste and texture, enjoy them within three days.

    How long do the Oats have to be in the fridge before consumption?

    Refrigerate your overnight oats mixture for at least 6 hours. I make mine just before bed and they are perfect in the morning!

    I don’t have a blender – how should I prepare the strawberries?

    You can chop them into small pieces, or use a potato masher to crush them slightly. You may need to use a little extra milk.

    Are Old Fashioned Rolled Oats Gluten-Free?

    There are different rules regarding this, depending on where you live in the world. For Australian residents, Coeliac Australia provides a great resource on this topic. Always be sure to read the labels and consult with a health professional if you are unsure.

    Variations and substitutions:

    Strawberries – I have used fresh strawberries, but frozen ones work perfectly so this recipe can be enjoyed all year round.

    Milk – you can use any milk of your choice for this recipe.

    Banana – some mashed banana is a delicious addition.

    Serving suggestions:

    Enjoy the Strawberry Overnight Oats as is, or customise the toppings to your liking.

    For this recipe, I like to use a topping of yoghurt and some sliced strawberries.

    You could also try:

    • Chopped almonds, walnuts or pistachios – the nuts offer a great crunch against the oats.
    • A drizzle of coconut cream.
    • Fresh or dried fruit of your choice.

    Ingredients

    For the Overnight Oats:

    • 250 g (8.8 oz) strawberries See Note 1
    • 2 teaspoon maple syrup
    • ¾ cup (180 ml) milk – I use almond or oat See Note 2
    • ½ teaspoon vanilla
    • 1 teaspoon lemon zest
    • 1 cup (80 g) old fashioned rolled oats
    • 1 tablespoon chia seeds See Note 3

    Toppings (optional):

    • Greek yoghurt or coconut yoghurt
    • strawberries – sliced

    Recipe Measurements:

    For accuracy, we recommend weighing your ingredients. This will produce the best results.

    Instructions

    • In a small blender, add the strawberries and puree until smooth.
    • Add the strawberry puree to a medium-size bowl. Add the oats, chia seeds, almond milk, vanilla, maple syrup and lemon zest to the strawberries. Mix well to combine.
    • Cover the bowl with clingwrap, or divide the mixture into two glasses or mason jars and cover. Refrigerate for 6 hours or overnight.
    • Serve with toppings of your choice and additional milk if the mixture is too thick.

    Notes

    1. Strawberries: fresh or frozen will work. If using frozen, allow them to defrost before pureeing. 
    2. Milk: use milk of your choice. I use almond or oat milk. Add more milk when serving if you prefer a thinner texture.
    3. Tablespoon: we use a standard Australian tablespoon which is 20 ml (4 teaspoons).
    4. Toppings: the toppings are optional (and are not included in the nutritional information). Use toppings of your liking – see suggestions above.

      Entire family devoured this recipe and asked for more! Wish I would have made a triple batch! I really liked the consistency – it was the perfect moisture level for overnight oats and the strawberry flavor was fresh but nicely subtle. Can’t wait to make again. Thank you

      My kids love these strawberry overnight oats and I love them too because they’re such a time saver in the mornings. I haven’t been wanting to cook breakfast because it’s so hot during the summer so this is great. My kids like to help me mash up the strawberries the night before and they look forward to this every day. 🙂
