These Blueberry Overnight Oats are the perfect nourishing breakfast to start your day. With just a few minutes of preparation time before bed, these oats are so simple to prepare and will be ready for you to enjoy in the morning! A creamy oat base is flavoured with lemon zest and topped with yoghurt and fresh blueberries. Fresh, simple and so delicious!

- They require minimal preparation – the ingredients base for the oats are mixed together and placed in the refrigerator!
- The quantities can easily be adjusted to your needs – the written recipe serves two, but can easily be halved or doubled!
- They are ideal for meal prep. Lasting for three days in the fridge, you can make a start on your breakfast preparation for the week ahead.
- Overnight oats are so versatile – we top our oats with Greek yoghurt and fresh blueberries, but you could also use coconut yoghurt, a swirl of blueberry chia jam and chopped nuts.

Blueberries – fresh or frozen blueberries can be used here. If using frozen blueberries, allow them to defrost in the fridge overnight before topping the oats.
Old Fashioned Rolled Oats – the best oats for this recipe. Although steel-cut oats and quick-cooking oats can be used in overnight oats recipes, they may require a different ratio of liquid.
Milk – I like to use almond or oat milk, but soy milk works just fine as does dairy milk – use a milk of your preference.
Chia seeds – helps give the oats a nice thick texture, and also add some extra fibre. Black or white chia seeds are fine to use in this recipe.
Maple syrup – for a hint of extra sweetness. You could also use honey.
Vanilla – use a good quality vanilla extract that is naturally produced from the vanilla bean and not synthetically flavoured.
Lemon zest – adds freshness and brightness to the overnight oats.
Greek yoghurt – when serving, we like to top the oats with Greek yoghurt. You could also use coconut yoghurt, or skip the yoghurt altogether if you prefer.

1 – Add your ingredients to a bowl:
Add all of your ingredients, except the blueberries and yoghurt, to a medium-sized mixing bowl.
2 – Mix well to combine:
Mix well to ensure everything is evenly combined.
3 – Refrigerate:
Cover the bowl with clingwrap, or divide the mixture into two glasses or mason jars and cover. Refrigerate for 6 hours or overnight.
4 – Serve with toppings:
When serving, top with Greek yoghurt and lots of fresh blueberries.

Blueberry Overnight Oats

Ingredients
For the Overnight Oats:
- 1 ¼ cups (300 ml) milk – I use almond or oat See Note 1
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest
- 1 cup (80 g) old fashioned rolled oats
- 1 tablespoon chia seeds See Note 2
- 1 tablespoon maple syrup
Toppings:
- 125 g (4.4 oz) blueberries See Note 3
- ½ cup Greek yoghurt
Instructions
- In a medium-sized bowl, add all of the ingredients except for the blueberries and yoghurt.
- Mix well until everything is well combined.
- Cover the bowl with clingwrap, or divide the mixture into two glasses or mason jars and cover. Refrigerate for 6 hours or overnight.
- When ready to serve, top with Greek yoghurt and fresh blueberries.
Notes
- Milk: use milk of your choice. I use almond or oat milk. Add more milk when serving if you prefer a thinner texture.
- Tablespoon: we use a standard Australian tablespoon which is 20 ml (4 teaspoons).
- Blueberries: fresh or frozen will work. If using frozen, allow them to defrost in the fridge overnight before topping the oats.
