Yellow peaches – we use fresh, juicy, perfectly ripe yellow peaches.
Banana – we use a frozen banana; it chills the smoothie and makes it creamier. If you have some bananas that are past their prime for eating fresh, it is a great idea to peel and then freeze them. They are perfect for smoothies.
Coconut yoghurt – use plain, unsweetened yoghurt.
Fresh mint – adds vibrant flavour.
Lime juice – we used freshly squeezed juice; it adds a gentle tang which balances the sweetness of the fruits.

1 – Add your ingredients to the blender:
To a blender, add all of your ingredients.
2 – Blend until smooth:
Blend until it is smooth and creamy. It doesn’t get any easier!
Tips for success and FAQs:
As peaches are the base for this smoothie, for the best result, choose a perfectly ripe, sweet peach. I add the softer ingredients to the bottom of the blender so the frozen fruit doesn’t get caught under the blades.
I find the natural sweetness of the fruit to be sufficient, but if you prefer it sweeter, you could add a small amount of pure maple syrup or honey.
You can if you like – I have done it both ways, and usually decide depending on the peach.
Yes, you certainly can, but it will then be preferable to use fresh banana. To get it to blend, you may need to add a little milk or water.
Variations and substitutions:
Peach – we have used a yellow peach, but you could use a white peach if you prefer. Nectarines or apricots are also great substitutes.

Berries – strawberries or raspberry are a great addition; they add an attractive pink tinge.

Coconut yoghurt – you can use regular Greek yoghurt if you do not need it to be dairy free.
Serving suggestions:
To accentuate the beauty of the smoothie, pour it into a glass and add a slice of peach and a pair of mint leaves to the top.
A light sprinkle of grated nutmeg on the top adds a lovely flavour.

Recipe Measurements:

Ingredients
- 2 large yellow peaches – peeled and stones removed, roughly chopped See Note 1
- 1 large frozen banana – cut into small pieces See Note 2
- ½ cup coconut yoghurt See Note 3
- 2 teaspoon fresh mint leaves – finely chopped
- 1 teaspoon lime juice – freshly squeezed
Instructions
- Place all the ingredients into a high-speed blender and blend until smooth and creamy.
- Pour into a large glass or two small glasses and enjoy.

- Peaches: you could also use nectarines or apricots.
- Banana: should you not have a frozen banana, you can add some ice cubes to chill the smoothie.
- Yoghurt: I have used coconut yoghurt, but you could also use Greek or plain/natural yoghurt.
- Sweetener: if you prefer your smoothies sweeter, add a little honey or maple syrup to taste.
