Your new favourite breakfast will be these Biscoff Overnight Oats. With gentle spice and caramelised flavour, the Biscoff Spread takes overnight oats to a new height. With just a few minutes of preparation time in the evening, these oats will be ready for you to enjoy in the morning or take on the go. Just combine old-fashioned rolled oats, Biscoff Spread, nutritious chia seeds and milk of your choice. There are few breakfasts easier to prepare or more delicious, as well as being the perfect way to start the day!

Perfection! I love any recipe with biscoff!!! I was super excited to find this one so I had an excuse to enjoy my favorite spread for breakfast. This turned out great and was a great change from my normal, plain recipe. Will make again!

Ingredients and Substitutions:

  • Milk – use a milk of your preference: you can use dairy milk if you wish. If you want the overnight oats to be vegan or nut-free, use appropriate milk.
  • Biscoff Spread – adds sweetness, the subtle warmth of spice and a caramelised note from the crushed cookies in the spread. You can use storebought or make your own!
  • Old Fashioned Rolled Oats – these are the best oats for this recipe. Steel-cut oats and quick-cooking oats can be used in overnight oats recipes, but may have a different ratio of liquid, and will produce a different texture.
  • Chia seeds – help give the oats a nice thick texture and extra fibre. Black or white chia seeds are fine to use in this recipe.
  • Salt – we use a small amount of sea salt – it is a great flavour booster.

Variations:

Lotus Biscoff Spread – if you are not able to find this spread you can use another Cookie Butter.
 
Milk – use the milk that you prefer. I like to use almond or oat milk, but soy milk works just fine as does dairy milk.
 
Maple syrup – check the mixture to see if you prefer it sweeter.  If so, you could add some pure maple syrup to the mixture or add it when serving.

What is Biscoff?

In 1932 in Belgium, a biscuit/cookie, by the name of “Biscoff”, was developed. The name is thought to be a combination of biscuit and coffee. The Biscoff biscuit/cookie, made by the company Lotus, is crisp, and generously spiced with a slightly caramelised flavour. Also known as speculoos, the biscuits are regarded as an ideal accompaniment to coffee. They are nut-free and vegan and do not contain artificial flavours, colours or preservatives.

Following their popularity, a spread was developed. Biscoff Spread is made from crushed cookies and oil and has a texture similar to Nutella. This has provided the opportunity to enjoy the flavour of the cookies in other recipes. In the simplest form, it is delicious spread on toast or with pancakes. Recipes abound for its use in cakes, biscuits, cheesecakes, ice cream and other baked goods. Similar spreads are sold by the name Cookie Butter.

How to Make Biscoff Overnight Oats:

Steps 1-2 of preparing this recipe - whisking the Biscoff spread with milk in a bowl and the remaining ingredients added.

1 – Combine the Biscoff spread and milk:
To a medium bowl, add the milk and Biscoff Spread and whisk until combined.

2 – Add the other ingredients:
Add the oats, chia seeds and salt.

Steps 3-4 of preparing this recipe - the ingredients combined and in a jar ready for the fridge.

3 – Mix well:
Ensure everything is mixed well and evenly combined.

4 – Refrigerate:
Cover the bowl with cling wrap, or divide the mixture into two glasses or mason jars and cover. Refrigerate for 6 hours or overnight.

Stir well and top with Greek yoghurt and slices of banana to serve.

Hint: add toppings like nuts when serving, so that they don’t soften.

Tips for Success, Storage and FAQs:

How long do I need to make the Biscoff Overnight Oats before eating?

Refrigerate your prepared mixture for at least 6 hours. I make mine just before bed, and they’re perfect in the morning!

How long will they last?

For the best taste and texture, enjoy them within three days.

Is Biscoff vegan?

Biscoff Cookie Butter is vegan and nut free. Be sure to always read labels if you have specific dietary requirements.

Is Biscoff gluten-free?

No, it is not, as the spread contains crushed cookies that are made from wheat flour.

Serving Suggestions:

You can enjoy these easy Biscoff Overnight Oats just as they are, but one of my favourite parts of making the oats is customising the toppings!

For this recipe, I like to use a topping of Greek yoghurt and sliced banana.

You could also try:

  • A crumbled Biscoff cookie for texture.
  • Chopped almonds or macadamia nuts.
  • A drizzle of coconut cream and a sprinkle of additional cinnamon.
  • Fresh or dried fruit of your choice.

Ingredients

  • 1 ¼ cups (300 ml) milk – I use almond or oat See Note 1
  • ¼ cup Biscoff spread See Note 2
  • 1 cup (80 g) old fashioned rolled oats
  • 1 tablespoon chia seeds See Note 3
  • ⅛ teaspoon sea salt

Instructions

  • To a medium bowl, add the milk and Biscoff spread and whisk until combined.
    (If your Biscoff spread is too thick, or has just come out of the fridge, you can melt it in the microwave for a few seconds or over a bowl of warm water.)
  • Add in the oats, chia seeds and salt to the milk mixture and stir until evenly combined.
  • Cover the bowl with clingwrap, or divide the mixture into two glasses or mason jars and cover. Refrigerate for 6 hours or overnight.
  • Stir well and serve the oats as is, or top with banana slices, yoghurt and an additional drizzle of Biscoff.

Notes

  1. Milk: use milk of your choice. I use almond or oat milk. Add more milk when serving if you prefer a thinner texture.
  2. Biscoff: use store bought or homemade. If your Biscoff is very hard, you can melt it in the microwave for a few seconds or over a bowl of warm water.
  3. Tablespoon: we use a standard Australian tablespoon which is 20 ml (4 teaspoons). For readers located elsewhere in the world, please use 1 tablespoon + 1 teaspoon for each tablespoon listed.
  4. Storage: for the best taste and texture, enjoy the Carrot Cake Overnight Oats within three days.
