  • cup (160 ml) extra virgin olive oil See Note 1
  • cup (80 ml) apple cider vinegar
  • 2 tablespoon honey See Note 2
  • 2 teaspoon Dijon mustard

  • Add all ingredients to a mason jar or bottle.
  • Shake until well combined, and the dressing has emulsified.

  1. For the best flavour, use a good quality extra virgin olive oil.
  2. In Australia, the tablespoon is 20 ml or 4 teaspoons. In many other countries, the tablespoon is 15 ml or 3 teaspoons. Please adjust the measurement if necessary.
  3. I prefer to season the salad, rather than the dressing. That way, I can control the amount of salt and pepper used in each dish.
