My Dark Chocolate Cherry Fudge is a crowd-pleasing sweet treat. With just 5 ingredients, this delectably rich, luxuriously indulgent fudge, comes together quickly and easily. The dark chocolate fudge is flavoured with glacé cherries and desiccated coconut. It comes together in just 20 minutes - the hardest part is waiting for it to cool!
150g(5.3 oz) white cooking chocolate - roughly chopped
Instructions
Line a 20 x 20cm (8 x 8 inch) baking dish with non-stick baking paper.(Allow an overhang with the baking paper – it makes it easier when removing the fudge!)Ensure you have all of your ingredients prepared and ready to go.
Add the dark chocolate and condensed milk to a glass bowl and place over a saucepan of barely simmering water. Stir until the chocolate has melted and the mixture is smooth.
Remove the bowl from the heat and immediately stir through the cherries and coconut. You will need to move quickly at this point as the mixture will thicken quickly.
Add the mixture to your prepared tin, pressing with a palate knife or the back of a spoon to smooth it out.Alternatively, use lightly greased hands to press the mixture into place.
Allow to cool on the bench for 30 minutes before refrigerating for one hour.
After an hour, melt the white chocolate in a clean bowl and pour over the fudge. Return to the fridge for a further hour, or until completely set.Once set, use a sharp knife to cut the Dark Chocolate Fudge into 25 pieces.
Notes
Chocolate: using a good quality chocolate will give you the best flavour fudge.
Storage: keep the fudge in an air-tight container, and store in the fridge for up to two weeks.
Freezing: store in an airtight container for up to 3 months. If storing in layers, place some baking paper between them. Bring it to room temperature for serving.
