No-Churn Lemon Ice Cream

You'll need these ingredients...

- Thickened/Whipping Cream - Lemon Juice - Lemon Zest - Caster/Superfine Sugar

Start by adding the lemon zest and juice and sugar to a food processor. Mix together to combine.

With the motor running, gradually add the cream through the feed tube. Process the mixture until it resembles the texture of whipped cream.

When the mixture is ready, it will look like this.. Then, it is time to prepare it for the freezer!

Add the ice cream mixture to an air tight container, or a tray and cover with two layers of cling film. Put into the freezer for a minimum of 4 hours.

Remove the dish from the freezer and allow to sit for 15 minutes to make it easier to scoop.

Serve with a garnish or fresh mint or some berries.

For the best flavour and texture, we recommend enjoying within 5 days.
