When you feel your breakfast routine needs a change, our Blackberry Overnight Oats may be the solution. The oats are nourishing and satisfying and certain to become a family favourite. A creamy oat base is sweetened with maple syrup and flavoured with the brightness of lemon zest. To serve, we add a topping of Greek yoghurt and perfectly ripe, sweet blackberries. Simply spend a few minutes at night preparing the oats, and in the morning your breakfast is ready to enjoy or take on the go. It doesn’t get much easier than this!

Ingredients and Substitutions:

- Old Fashioned Rolled Oats – these are the best oats for this recipe. Although steel-cut oats and quick-cooking oats can be used, they may require a different ratio of liquid.
- Milk – use the milk of your preference. I like to use almond or oat milk, but soy milk works just fine, so does dairy milk.
- Chia seeds – help give the oats a nice thick texture and add fibre. Black or white chia seeds are suitable.
- Maple syrup – we add a small amount for gentle sweetness.
- Vanilla – use a good quality vanilla extract that is naturally produced from the vanilla bean and not synthetically flavoured.
- Lemon zest – adds freshness and brightness.
- Greek yoghurt – when serving, we add Greek Yoghurt to the top. You could also use coconut yoghurt if you prefer.
- Blackberries – fresh or frozen blackberries are added to the top of the oats. If using frozen berries, allow them to defrost in the fridge overnight.
Variations:
Maple syrup – use honey if you prefer.

How To Make Blackberry Overnight Oats:

1 – Add your ingredients:
Add all the ingredients, except the blackberries and yoghurt, to a medium-sized mixing bowl.
2 – Mix well:
Mix well to ensure everything is evenly combined.
Cover the bowl with clingwrap or divide the mixture into two glasses or mason jars and cover.
Refrigerate for 6 hours or overnight.
When serving, top with Greek yoghurt and fresh blackberries.
Hint: save adding any crunchy toppings such as nuts or granola until you’re ready to eat, so they don’t soften.

For the best taste and texture, enjoy them within three days.
Refrigerate the oats for at least 6 hours before eating. I find it ideal to make them just before bed; they are perfect in the morning!

Top Tip:
Rolled oats have a long shelf life, but they can become rancid. If you have had your oats for a long time, it is worth checking. I find the best way is the “smell test”. When fresh, they should have a sweet, slightly nutty aroma. If rancid, there will be an unpleasant smell.

We love to enjoy the oats with extra yoghurt and berries, but some alternatives are:
- Chopped nuts for great texture. Try almonds, walnuts, pistachios or another of your preference.
- Toasted coconut flakes.
- Additional fresh lemon zest.

Blackberry Overnight Oats
Please note:

Ingredients
For the Overnight Oats:
- 1 ¼ cups (300 ml) milk – I use almond or oat See Note 1
- 1 teaspoon vanilla extract
- 1 ½ teaspoon lemon zest
- 1 cup (80 g) old fashioned rolled oats
- 1 tablespoon chia seeds See Note 2
- 1 tablespoon maple syrup
Toppings:
- 125 g (4.4 oz) blackberries See Note 3
- ½ cup (125 ml) Greek yoghurt
Instructions
- In a medium-sized bowl, add all of the ingredients except for the blackberries and yoghurt.
- Mix well until everything is well combined.
- Cover the bowl with clingwrap, or divide the mixture into two glasses or mason jars and cover. Refrigerate for 6 hours or overnight.
- When ready to serve, top with Greek yoghurt and fresh blackberries.
Notes
- Milk: use milk of your choice. I use almond or oat milk. Add more milk when serving if you prefer a thinner texture.
- Tablespoon: we use a standard Australian tablespoon which is 20 ml (4 teaspoons).
- Blackberries: fresh or frozen will work. If using frozen, allow them to defrost in the fridge overnight before topping the oats.
